I highly recommend peeling ginger, chopping into small chunks and freezing :)
 
But not vegan :(

I am not sure vegan is for me - I could switch to vegetarian quite comfortably (just a bit tougher re: macros/protein intake) but vegan could be quite the challenge, I'd imagine.

But the amount of fresh fruit and veg speaks to me. I keep very little of my fruit in the fridge though. That way I usually eat more of it, especially all sorts of berries.

100% my technique as well.

I tried vegan and it's basically replacing dairy with lots of beans, pulses, tofu etc. for protein, and for the most part it was actually perfectly fine, but I just found that I missed CHEESE far too much. Dairy milk I can easily give up for alternative milk-type drinks but a cheese-free life is a no-go zone for me.
