I just cooked this mushroom bourguignon because I wanted to go meat-free for our Christmas Eve eve dinner — I'm quite happy with the results

the red wine really made it RICH. I did however leave the pan with the leftover potatoes on while we ate, so the kitchen is on fire now. oops.
